Harvest Salad
This isn't a recipe per se because I think having a recipe for a salad is pretty difficult. There's just so many variations on the ingredients that having something so formal as a recipe just seems kind of wrong. Basically I just wanted to share what I put in this particular salad and how delightfully (and autumnal) it turned out.
Suggested Ingredients
Mixed spring greens, roasted butternut squash, thinly sliced red onion, sliced pears, pomegranate seeds, dried cranberries, sliced toasted almonds, crumbled gorgonzola
Other ingredients that you might consider including or substituting
Chopped apple, raisins, baby spinach, sautéed mushrooms, fresh goat's cheese, candied pecans, roasted sweet potatoes.
The Finished Product
Here's how I served it all up. I actually didn't have any dressing on it, but I think it would also be great with a light and simple lemon vinaigrette or maybe a maple vinaigrette, as long as it wasn't too cloying.
