Apple Crisp

And now for something completely different, Apple Crisp. I took a step back from baking this month since I knew that I would have a lot of things to bake as we get into Fall and then the holidays. But who can say no to Apple Crisp? Not me. This is my own version of one the simplest recipes out there. What makes mine unique is the number and amount of spices I use. I like it well-spiced. Let’s put it that way. Enjoy this spicy treat, the last in September’s Comfort Food Series. Onward to all the treats that October holds!


RECIPE

Yield: at least 8 servings | Prep Time: 20 minutes |Bake Time: 1 hour

APPLE CRISP

  • 1 5-lb bag of McIntosh apples
  • 1 lemon, juiced and zested
  • ½ c granulated sugar
  • 2 t ground cinnamon
  • 2 t ground ginger
  • 1 t ground nutmeg
  • 1 t ground cloves
  • 1 t ground cardamom

TOPPING

  • 1½ c flour
  • ½ c granulated sugar
  • ¾ c light brown sugar
  • 1 c oats
  • 1 t salt
  • 1 t cinnamon
  • ½ c cold butter
  • 1 egg

1.     Peel, core and chop the apples into large chunks. Mix the apples with the sugar, lemon juice, zest, and all the spices in a large bowl and turn out into a casserole or baking dish.

2.     In a second bowl, mix the topping ingredients (except for the butter and egg) thoroughly. Chop the butter into small cubes and rub into the dry mixture until it is distributed evenly and very crumbly. Mix in the egg until the mixture is just moist.

3.     Sprinkle the topping over the apples. Bake until the Apple Crisp is brown and bubbling. Serve warm with ice cream or whipped cream

There we end our September of Comfort Foods. I've made it through this marathon post-writing session and got almost all of them in on Food-ful Friday. They'll be spread out a little more next time. I just have a lot of content going up next week before October starts. I hope you enjoyed it!
