Homemade Caesar Dressing

Caesar Salad is one of the simplest salads to make and everyone seems to just love it. I think it's because everyone secretly loves anchovies, but doesn't like the thought of eating tiny fish. When they are mashed up in a dressing, you don't know you're eating them. Food trickery! Delicious food trickery! If you do love Caesar Salad as much as I do, try out this recipe that is in all seriousness the best tasting Caesar dressing EVER. 


The Salad

  • 1-2 heads of Romaine Lettuce, washed, dried and then torn into bite-size pieces
  • 1/4 c. shredded or grated parmesan cheese
  • 1/3 c. croutons
  • 1/4 c. Caesar Dressing (recipe follows)

Toss all the ingredients to combine in a large bow. Serve as a side salad for a meal or top with grilled chicken, salmon or your favorite protein for a quick and elegant meal.

The Dressing

  • 2 cloves of garlic
  • 1 T. dijon mustard
  • juice of one lemon
  • 1 T. Worcestershire sauce
  • 2 oz. anchovies (packed in oil and drained) 
  • 2 T. olive oil
  • dash of hot sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. mayonnaise
  • 1/4 c. grated parmesan

Blitz all of the ingredients except for the mayonnaise and parmesan in a blender or small food processor until everything is chopped finely and combined. Add the mayonnaise and then blitz again for a few seconds. Stir in the parmesan. And there you have the zesty, lemony, most piquant Caesar dressing in the world. This makes more than you will need for one salad, so you can save the rest in an airtight container for a couple of weeks.
