Pickled Radishes | Produce Overload: Recipes from the Garden

What you gonna do with all that veg? Well, maybe a little canning. 

With all the produce that will hopefully be coming out of my garden in the next few months, I'm going to have to get creative with how I'm going to use it up. This is the first post in what will be a series about recipes to deal with that Produce Overload. Hence the clever name of the series. 

First up, I am indeed trying my hand at canning and I am starting with pickles, pickled radishes to be exactly. Here's the straightforward and simple recipe I used to pickle the glut of radishes I've pulled up over the past couple of weeks. And a lovely video if you want a visual aid.

Pickled Radishes
Quick and easy way to preserve all those radishes you are growing in your garden
Ingredients
  • 1 large bunch radishes
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 1/4 tsp crushed red pepper
  • 1 tsp mustard seeds
  • 1/2 onion, sliced
Instructions
1. Top and tail your radishes meaning cut of the top and the little root thingy. Wash them to remove any dirt.2. Slice the radishes up. I do 1/8" or 2mm slices to keep them a little bit crunchy when they are pickled. Put aside.3. Add the rest of the ingredients (except for the onion) into an enamel saucepan. Stir to dissolve the salt and sugar and bring to a boil. Remove from the heat.4. Add the radishes and onion to a sterilized 1 liter (or similarly sized jar). Pour the hot liquid over the vegetable. Close the jar.5. Let the jar cool to room temperature and then put it in the refrigerator to cool completely. The pickles can be eaten in about 6 hours, but letting them sit long makes them taste better in my opinion. I'd say that you can keep them for about a month (if they last that long). Full disclosure: I am not a food scientist, so don't hold me to that and use your best judgement!
