Blueberry Almond Tart | Kitchen Adventures

It's been awhile since you've gotten a food post from me. Get excited for this delicious and relatively simple dessert, the Blueberry and Almond Tart. Bonus-- you can very simply turn this into a tart for any type of fresh fruit. Very, very yum.

RECIPE

Pastry Cream:
Boil 1.5 cups of milk with a vanilla bean and set aside to steep. In a separate bowl, combine 4 eggs yolks, 1/3 cup of sugar, and 1/4 cup of flour. Whisk until smooth. Seed the vanilla pod and add those seeds to your milk. Add the milk mixture to the egg mixture and whisk to combine. Return to the pot and heat on medium heat until it has thickened to a pastry cream consistency. Cool completely.

Almond Crust:
Combine 2 cups almond flour or meal, 1/4 cup of sugar and 6 tablespoons of melted butter. Press the mixture into a tart pan or dish that has been sprayed with cooking spray. Chill the crust for 30 minutes then bake in a preheated 350 degree oven for 20 minutes until the crust is browned. Cool the crust completely.

The Assembly:
Layer the pastry cream onto the crust. Top it with a thick layer (between 2 and 3 cups) of washed and de-stemed fresh blueberries. Other types of berries or a mixture of berries also work well. Serve and enjoy!
